For foolproof home fries, every single time…You must remember the following:

Use butter and oil;

Ensure that the potatoes are cut evenly and layered singly to ensure browning and crisped outsides as shown above;

Toss no more than four times to get all the potatoes nice and crisp;

Make sure that you dust the potatoes with onion powder and garlic powder to ensure dryness AFTER you pat them dry and BEFORE you add them to the oil – this also ensures crispness.
